A Tasting Menu

An evening at Alma is a journey through time. It is a story compiling moments and places of our lives as a couple, chef and sommelier, from the beaches of Oaxaca, to the mountains of central Mexico, to the vineyards of Catalunya and coastal Spain. It is an ode to the concept of travel, to the passage of time, to eventually returning to your roots, capturing the nostalgia of tastes, emotions and human connections experienced along the way.

Alma’s cuisine is rooted in ancestral corn and the living culinary traditions of Mexico. It’s also inspired by the seasons, the forests, and the cold waters of Quebec.

This is the story of Juan — a chef shaped by two worlds, two languages, two lands. Half his life was spent under the sun of Mexico, the other half north of the border with his wife and partner, Lindsay, in Quebec.

Alma sits at the intersection of these two halves — where they meet and come together.
This isn’t a fusion. It’s a marriage.

A story where the past returns to live in the present.
And often, where the present looks back to reconnect with the past.

Menu Carte Blanche

The most intimate and unique expression of Alma, the Menu Carte Blanche is a 9-course tasting menu inspired by Chef Juan Lopez Luna’s past and present memories of Mexico, featuring heirloom corn from his home state of Tlaxcala and fresh, seasonal ingredients from Quebec. It is a journey to our most favorite places, largely inspired by the concept of “mar y montaña," where the mountains meet the sea. The menu is seafood-focused.
